This moreish marmalade is inspired both by Marathon, the Greek word for fennel, which lent its name to the battleground, the herald’s run to Athens, and so many races since.

And the monks’ herb garden at the Strata Florida Abbey in the Cambrian Mountains to which pilgrimages have been made across the ages.  

The only challenge this Hand-Cut Seville & Fennel Seed Marmalade will present is how many jars you will need in your larder before you run out!
