Afternoon tea, a melt-in-the-mouth traditional Victoria Sponge with lashings of double cream and raspberry preserve, the flavour subtly enhanced with crushed cardamom, or scones transformed by delicious strawberries and champagne. Hand-made preserves have to be one of the most delicious delights in life. My favourite is probably blackberry with its evocative taste of childhood and precious last note of summer. But whether it be blackcurrants enriched with vanilla, blueberries enlivened with a touch of bay, apricots with lavender, rhubarb with fig, strawberries with champagne or gooseberries perfectly married with elderflower as Alice might say, it must come always to ‘jam today’.
